Now that I have had the baby, I am trying to make sure that I eat healthy for mine and the baby’s sake and I am trying to incorporate better eating habits. Of course that includes my snacks because as you might guess, breastfeeding moms have a bit of a hard time with hunger…Particularly yours truly who seems to be hungry 24/7!

Viki’s Granola Blueberry Almond is a heathier option for those that need a little something in the middle of the day without the guilt…. Viki’s Granola Blueberry Almond is Gluten-Free, Non-GMO Verified, has no preservatives, no Sodium or Cholesterol, and it is Sweetened with Organic Honey. In addition, the granola mix is kosher, dairy free, has 0g trans-fat and have no preservatives making Viki’s granola a really healthy snack that can be eaten by itself, or added to yogurt ( my favorite).

This granola contains fine almond oats and granola, so it is very easy to implement this on different dessert recipes like the Mixed Berry Crisp that I will share with you all Courtesy of Viki’s Granola.

The granola mix is really not too sweet and then you come across the small blue berry clusters in the mix which makes it a little sweeter…yum!

Among the ingredients, you will find gluten free oats, organic honey, almonds as I mentioned before, but the mix also includes expeller pressed canola oil, dried blueberries, and unsweetened coconut…What I like the most about the granola, is the honey after taste that I get afterwards.

Viki’s granola is available in different flavor blends and retails for a little over $5.00 in selected retailers.

Mixed Berry Crisp

Topping Ingredients:

  • ¾ cups all-purpose flour
  • ½ cup (packed) light brown sugar
  • 1 cup Viki’s Granola Blueberry Almond
  • 1 stick unsalted butter
  • Filling Ingredients:
  • 4 cups frozen mixed berries (don’t thaw)
  • 1/3 cup of sugar
  • 1 tablespoon all-purpose flour

Directions:

  • Preheat oven to 375 degrees F.
  • Lightly butter oven safe ceramic bowl.
  • Place topping ingredients into a bowl, working the butter into the granola mixture. Once complete, set aside.
  • Place filling ingredients into a large bowl and mix thoroughly.
  • Pour the berry mixture into the buttered ceramic bowl.
  • Pour granola mixture evenly on top of the berries.
  • Bake for 40 minutes or until the topping is golden brown and the fruit juices are bubbling.
  • Let it rest for 15 minutes before serving.
